- 2 carrots, grated
- 3 cups baby spinach
- 1/4 cup chopped roasted pistachios
- 1 tablespoon olive oil
- kosher salt and black pepper

- While the couscous is still warm, fold in the carrots, spinach, pistachios, olive oil, and ¼ teaspoon each salt and pepper.
