Ingredients

  1. Check 1 cup couscous, cooked according to the package directions
  2. Check 2 carrots, grated
  3. Check 3 cups baby spinach
  4. Check 1/4 cup chopped roasted pistachios
  5. Check 1 tablespoon olive oil
  6. Check kosher salt and black pepper

Directions

  1. While the couscous is still warm, fold in the carrots, spinach, pistachios, olive oil, and ¼ teaspoon each salt and pepper.
