Ingredients

  1. Check 1cup couscous, cooked according to the package directions
  2. Check 2 carrots, grated
  3. Check 3cups baby spinach
  4. Check 1/4cup chopped roasted pistachios
  5. Check 1tablespoon olive oil
  6. Check kosher salt and black pepper

Directions

  1. While the couscous is still warm, fold in the carrots, spinach, pistachios, olive oil, and ¼ teaspoon each salt and pepper.
