couscous, cooked according to the package directions

carrots, grated

baby spinach
1/4
cup
chopped roasted pistachios

tablespoon
olive oil
kosher salt and black pepper

Directions

  1. While the couscous is still warm, fold in the carrots, spinach, pistachios, olive oil, and ¼ teaspoon each salt and pepper.
