- 1 cup couscous, cooked according to the package directions
- 1 15.5-ounce can kidney beans, rinsed
- 1 avocado, cut into bite-size pieces
- 4 scallions, sliced
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- kosher salt and black pepper
- Let the couscous cool. Fold in the beans, avocado, scallions, lime juice, olive oil, and ¼ teaspoon each salt and pepper.
