Ingredients
- 1 cup thinly sliced pineapple
- 1 tablespoon sugar
- 1 tablespoon chopped fresh mint
- 1 1/2 cups low-fat cottage cheese
- 2 tablespoons pomegranate seeds
Directions
- In a medium bowl, toss the pineapple with the sugar and mint; let sit for 5 minutes.
- Divide the cottage cheese between 2 bowls. Dividing evenly, top with the pineapple mixture and pomegranate seeds.
