- 4 cups fresh corn kernels (from 6 ears)
- 2 cups halved grape tomatoes
- 1/3 cup chopped fresh chives
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 4 ounces Cheddar, cut into 1/2-inch cubes
- kosher salt and black pepper
- Combine the corn, tomatoes, chives, oil, lemon juice, Cheddar, and ½ teaspoon each salt and pepper in a large bowl.
- Serve at room temperature.
