Ingredients

  1. Check 5ounces spaghetti (about 1/3 of a box)
  2. Check 1 carrot, shredded
  3. Check 1 Kirby cucumber, cut into 1/4-inch pieces
  4. Check 4ounces firm tofu, cut into cubes
  5. Check 1/4cup chopped roasted cashews
  6. Check 1tablespoon canola oil
  7. Check 2teaspoons toasted sesame oil
  8. Check 1tablespoon fresh lime juice
  9. Check kosher salt

Directions

  1. Cook the pasta according to the package directions. Drain and run under cold water to cool.
  2. In a large bowl, toss the pasta, carrot, cucumber, tofu, cashews, canola and sesame oils, lime juice, and ½ teaspoon salt.
