Ingredients
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup milk
- 2 eggs
- 2 tablespoons butter
- 6 tart apples, such as Granny Smith, peeled, cored, halved, and cut into 1/4-inch slices
- 1/2 cup raisins
- 1 teaspoon grated lemon zest
- confectioners' sugar
Directions
- Heat oven to 350° F. Lightly coat a 9-inch square baking dish with vegetable cooking spray. In a small bowl, combine the flour, salt, and 1 tablespoon of the granulated sugar. Whisk in the milk, then the eggs, until the batter is smooth and lump-free.
- In a medium skillet, melt the butter over medium heat and cook the apple slices with the remaining granulated sugar until tender, about 10 minutes. Mix in the raisins and lemon zest and transfer to the baking dish.
- Pour the batter over the apples and bake for 40 minutes or until puffed and golden. Sprinkle with confectioners' sugar and serve warm.
