Chopped Apple and Feta Salad

Ingredients

bunch
watercress (4 cups)
1
green apple, unpeeled, cut into 1/2-inch pieces
1/4
cup
orange juice
1
tablespoon
olive oil
2
tablespoons
honey
2
tablespoons
chopped fresh mint
4
ounces
Feta
freshly ground black pepper

Directions

  1. In a large bowl, combine watercress, green apple, orange juice, olive oil, 1 tablespoon honey, and mint and toss well. Break up the Feta into small pieces. Divide the salad among 4 plates and top each with some of the Feta, drizzle with additional honey, and top with freshly ground black pepper.
