Ingredients

  1. Check 1bunch watercress (4 cups)
  2. Check 1 green apple, unpeeled, cut into 1/2-inch pieces
  3. Check 1/4cup orange juice
  4. Check 1tablespoon olive oil
  5. Check 2tablespoons honey
  6. Check 2tablespoons chopped fresh mint
  7. Check 4ounces Feta
  8. Check freshly ground black pepper

Directions

  1. In a large bowl, combine watercress, green apple, orange juice, olive oil, 1 tablespoon honey, and mint and toss well. Break up the Feta into small pieces. Divide the salad among 4 plates and top each with some of the Feta, drizzle with additional honey, and top with freshly ground black pepper.
