watercress (4 cups)
green apple, unpeeled, cut into 1/2-inch pieces
chopped fresh mint
freshly ground black pepper
- In a large bowl, combine watercress, green apple, orange juice, olive oil, 1 tablespoon honey, and mint and toss well. Break up the Feta into small pieces. Divide the salad among 4 plates and top each with some of the Feta, drizzle with additional honey, and top with freshly ground black pepper.
