Ingredients

  1. Check 8 thin slices prosciutto
  2. Check 1tablespoon olive oil
  3. Check 4 small chicken cutlets
  4. Check kosher salt and black pepper
  5. Check 4 sandwich rolls
  6. Check 1/4cup mayonnaise
  7. Check 1/4cup olive tapenade
  8. Check 1 medium tomato, sliced
  9. Check 1/2cup baby arugula

Directions

  1. Heat oven to 400º F. Place the prosciutto in a single layer on a rimmed baking sheet and roast until crisp, 8 to 10 minutes.
  2. Meanwhile, heat the oil in a large skillet over medium-high heat.
  3. Season the chicken with ½ teaspoon salt and ¼ teaspoon pepper and cook until golden brown and cooked through, about 2 minutes per side.
  4. Form sandwiches with the rolls, mayonnaise, tapenade, chicken, prosciutto, tomato, and arugula.
