Ingredients

  1. Check 1/2cup low-fat Greek yogurt or sour cream
  2. Check 2tablespoons white wine vinegar
  3. Check 1/2teaspoon ground cumin
  4. Check kosher salt and black pepper
  5. Check 3/4pound large carrots (2 to 3), peeled
  6. Check 2 Granny Smith apples, halved and cored
  7. Check 1/2cup golden raisins
  8. Check 1/4cup chopped cilantro

Directions

  1. In a large bowl, whisk together the yogurt, vinegar, cumin, ½ teaspoon salt, and ¼ teaspoon pepper.
  2. Cut the carrots into 3- to 4-inch pieces. In a food processor fitted with the grating disk, grate the carrots and apples.
  3. Add the carrots, apples, raisins, and cilantro to the yogurt dressing and toss to combine.
