Combine the scallions, peppers, thyme, lime juice and zest, oil, honey, ginger, 2 teaspoons salt, and ½ teaspoon pepper in a large resealable plastic bag, shallow bowl, or baking dish. Marinate 1½ to 2 pounds of meat or poultry and refrigerate, covered, for at least 30 minutes and up to overnight or 1½ to 2 pounds of seafood or tofu for 15 minutes maximum.

  3. Check 4 sprigs fresh thyme
  4. Check 1/2 cup fresh lime juice, plus 1 tablespoon lime zest
  5. Check 1/4 cup olive oil
  6. Check 2 tablespoons honey
  7. Check 2 tablespoons grated fresh ginger
  8. Check kosher salt and black pepper
