Ingredients
- 8 slices bacon
- 8 ounces fresh goat cheese
- 8 pieces lettuce
- 2 tomatoes, sliced
- kosher salt and black pepper
- 8 slices whole-wheat bread, toasted
Directions
- Cook the bacon in a large skillet over medium heat until crisp, 6 to 8 minutes. Transfer to a paper towel-lined plate.
- Make 4 sandwiches with the goat cheese, lettuce, tomatoes, bacon, ¼ teaspoon each salt and pepper, and bread.
