Ingredients

slices bacon

ounces
fresh goat cheese
8
pieces lettuce
2
tomatoes, sliced
kosher salt and black pepper
8
slices whole-wheat bread, toasted

Directions

  1. Cook the bacon in a large skillet over medium heat until crisp, 6 to 8 minutes. Transfer to a paper towel-lined plate.
  2. Make 4 sandwiches with the goat cheese, lettuce, tomatoes, bacon, ¼ teaspoon each salt and pepper, and bread.
