Ingredients
- 1 bunch scallions
- 1 lime
- 2 15-ounce cans black-eyed peas
- 1 10-ounce can diced tomatoes and green chilies (such as Ro-Tel)
- 1 large bag tortilla chips
- kosher salt
- freshly ground black pepper
Directions
- Combine the peas with tomatoes and chilies, scallions, and lime juice. Season to taste with the salt and pepper. Serve with tortilla chips.
