Black-Eyed Pea Salsa

Ingredients

  • 1 bunch scallions
  • lime
  • 2 15-ounce cans black-eyed peas
  • 1 10-ounce can diced tomatoes and green chilies (such as Ro-Tel)
  • 1 large bag tortilla chips
  • kosher salt
  • freshly ground black pepper

Directions

  1. Combine the peas with tomatoes and chilies, scallions, and lime juice. Season to taste with the salt and pepper. Serve with tortilla chips.
