Ingredients
- 1 15.5-ounce can black beans, rinsed
- 1 orange bell pepper, seeded and sliced
- 1 jalapeño pepper, seeded and sliced
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 3/4 teaspoon ground cumin
- kosher salt and black pepper
- 1 avocado, sliced
- 1/2 cup cilantro leaves
Directions
- In a medium bowl, combine the beans, bell pepper, jalapeño, lime juice, oil, cumin, ½ teaspoon salt, and ¼ teaspoon pepper.
- Fold in the avocado and cilantro.
