Ingredients

black beans, rinsed

orange bell pepper, seeded and sliced

jalapeño pepper, seeded and sliced

fresh lime juice

tablespoons
olive oil

teaspoon
ground cumin
kosher salt and black pepper

avocado, sliced
1/2
cup
cilantro leaves

Directions

  1. In a medium bowl, combine the beans, bell pepper, jalapeño, lime juice, oil, cumin, ½ teaspoon salt, and ¼ teaspoon pepper.
  2. Fold in the avocado and cilantro.
