A basic baked potato—russet or sweet—is a great vehicle for all kinds of tasty toppings.

Ingredients

  1. Check 4 large russet potatoes (about 4 pounds total)
  2. Check 4 large sweet potatoes (about 3 pounds total)
  3. Check 3 tablespoons canola oil
  4. Check kosher salt

Directions

  1. Heat oven to 400° F. Rub the potatoes with the oil and ½ teaspoon salt. Place on a rimmed baking sheet and bake until tender and easily pierced with a fork, 60 to 70 minutes.
