- 4 large russet potatoes (about 4 pounds total)
- 4 large sweet potatoes (about 3 pounds total)
- 3 tablespoons canola oil
- kosher salt
- Heat oven to 400° F. Rub the potatoes with the oil and ½ teaspoon salt. Place on a rimmed baking sheet and bake until tender and easily pierced with a fork, 60 to 70 minutes.
