Quick Tip

Open freezer
The apricots can be assembled and frozen, unbaked, up to 1 month in advance. Freeze them on a parchment-lined baking sheet until firm, then transfer them to a resealable plastic bag. To cook, bake from frozen at 375º F for 8 to 10 minutes per side; keep warm at 250º F. Brush with the maple syrup before serving.

High in vitamin C, these hard, tart berries are grown in bogs in colder regions of North America and Europe. They’re almost always eaten cooked, as in the classic Thanksgiving relish.
